Awesome Pepper Steak Sandwich

Tender slices of steak with sauteed green and red peppers and gooey cheese. Easy to make and delicious, Mmmm, I’m getting hungry for another one.

Ingredients:

2 to 2 1/2lbs. london broil or tri tip

6 french rolls

1 green pepper ( sliced )

1 red pepper ( sliced )

1 onion (sliced )

3 cloves garlic ( thin sliced )

1 shallot ( thin sliced )

8 to 10 oz. grated or sliced white cheese ( swiss, mozzarella, provolone or monterrey jack )

steak seasoning, or, salt, pepper, garlic powder and onion powder

Method:

Season your meat liberally with the steak seasoning and grill on high heat for about 10 to 15 minutes a side. Let it rest on a plate for about 20 minutes, this will allow the juices to redistribute back into the meat and cool enough to slice. It should look like this after grilling.

While your meat is resting slice your bread, peppers,onions, garlic and shallot.

Slice your meat against the grain as thin as you can get it and return it to your plate to soak up the juice.

Melt about a tablespoon of butter in a skillet on medium high heat and saute your green and red peppers for 3 to 5 minutes. Add garlic and shallot and saute for another 3 to 5 minutes. Lightly sprinkle the steak seasoning over the top of your peppers just enough for a light coat. All you’re doing here is seasoning the veggies. Add the sliced meat to the skillet and cook just to heat through ( about 2 to 3 minutes ). Remove from heat. Place your french rolls open faced onto a baking sheet and add cheese to top and bottom of your rolls putting twice as much cheese on the top part of your roll as on the bottom. Bake in a preheated 350 to 375 degree oven for 10 to 15 minutes ( until cheese melts ).

Place your top bun onto your bottom bun and cut in half if desired. they’re ready to eat… enjoy them with a salad and french fries or whatever sides you like. these are definitely delicious!

Awesome Beef Stew Recipe!

Big chunks of super tender beef and vegetables in a hearty sauce. This is a great wintertime recipe that you and your family and friends will definitely enjoy. Give it a try, you won’t be disappointed.

Ingredients:

2 1/2 lbs. chuck roast ( 1 1/2in. cubes )

1/2 cup flour

2 tbsp. olive oil

1/3 cube butter or margarine

1 1/2 to 2 cups good red wine ( I used a Merlot )

1 qt. beef stock

4 to 5 cloves fresh garlic ( sliced thin )

1 shallot ( sliced thin )

2 tbsp. fresh rosemary ( chopped )

2 tbsp. fresh oregano ( chopped )

2 tbsp. fresh parsley ( chopped )

1 tbsp. fresh cracked pepper

1 tbsp. salt

3 carrots ( sliced thick )

1 stalk celery ( small dice )

1 1/2 to 2 lbs. small red or yukon gold potatoes ( 1in. cubes )

1 cup pearl or petite onions ( fresh or frozen )

1 1/2 cup peas ( fresh or frozen )

Method:

Dredge your beef chunks in the flour. Add olive oil and butter to a 5 to 8 quart stock pot and heat to medium high. After the butter has melted add your beef chunks and brown on all sides and remove to a plate. This is best done in batches. To much meat at one time in your pot will tend to steam the meat and it will not sear the way you want it to. Put just enough meat at one time to cover the bottom of your pot with one layer.

After your meat has been browned and removed to a plate take your pot away from the burner and add your wine and beef stock. It is always a good idea to remove your pot or pan when adding alcohol to prevent a fire or flare up. Place your pot back on the burner and add the celery, garlic, shallot, rosemary, oregano, parsley, salt and pepper and bring to a boil. Add your meat back to the pot and reduce heat to medium low and simmer for 2 hours covered stirring occasionally.

After 2 hours add your carrots and potatoes and simmer for 30 minutes, covered. After 30 minutes add your onions and simmer for 15 minutes, covered then add your peas and simmer another 15 minutes, covered. Time to eat! Serve with your favorite bread and a salad… yummy! Makes 8 to 10 servings.

Delicious Peaches in Puff Pastry

Here is a quick and easy dessert for you to try. Juicy peaches, roasted pecans, vanilla ice cream and maple syrup… YUM! This is a great recipe that you can try with different kinds of fruit. Cherries, strawberries, apples, blueberries, raspberries, almost any fruit will work well.

Ingredients:

1lb. peach wedges ( fresh or frozen )

2 sheets puff pastry ( 1 box )

1/4 cup flour

3 tbsp. sugar

3 tbsp. brown sugar

1/2 teas. cinnamon

2 to 3 ounces chopped pecans or walnuts

2 tbsp. butter or margarine

1pint vanilla ice cream

maple syrup ( thick )

Method:

Add butter, nuts. 1 tablespoon each of sugar and brown sugar and a tiny pinch of salt and 1/4 teaspoon of cinnamon to a small sauce pan and saute for 10 minutes or until nuts are slightly browned. remove from heat and cool.

In a large mixing bowl add your peaches, flour, sugar, brown sugar, cinnamon and nuts. Stir to combine.

Take one sheet of puff pastry and roll out on a floured surface to 1/4 inch thickness. Spread 1/2 of the peach mixture onto the bottom half of the puff pastry leaving 1 inch of room around the bottom and sides of the pastry. Fold over the top half and crimp it down with a fork to seal the edges. Poke holes in the top using a fork to ventilate during baking. Transfer to a non-stick baking sheet and repeat with the second sheet of puff pastry.

Bake in a 425 degree preheated oven for 20 to 30 minutes, until pastry has risen and is golden brown. It should look like this.

Slice into about 2 inch strips and place a few scoops of ice cream on top of your piece and drizzle with a good quality maple syrup. Enjoy!

Makes 8-10 servings.

This is great for parties and only takes a little bit of time to prepare. Your friends and family will surely enjoy this sweet treat.
