Mexican Style Grilled Pork Enchiladas in Red Sauce


Tender chunks of pork marinated in flavorful Mexican seasonings and grilled to perfection. A home made red enchilada sauce made with dried chilis, onions, tomato sauce, cilantro and a few more seasonings really make this recipe outstanding. Corn tortillas, cheese and some of the best Mexican condiments round out these enchiladas and really bring the authentic Mexican flavor home. Simply wonderful!

    I don’t own a sieve like the one you have, will a cheesecloth do the trick for straining the sauce? Otherwise, I suppose I’ll be making a special trip to the store tonight. :P

      Hi L2Kitchen,

      I’ve never tried straining it with a cheesecloth so I’m not positive but I think it should work. I would add the sauce a little at a time into the cheesecloth, pull up the corners and twist so that the sauce forms a ball and then just squeeze out the liquid into a bowl.
