Frozen Chocolate and Peanut Covered Bananas

So simple, anyone can make these. Only 3 ingredients and about 20 minutes to make. You will enjoy munching on one of these on a hot summer day. Great idea for a party snack!

Ingredients:

3 bananas ( peeled and cut in half )

10 oz. semi sweet chocolate chips

2 to 3oz. chopped peanuts

6 popsicle sticks

Method:

Insert popsicle sticks into bananas and transfer to freezer for 15 to 20 minutes ( long enough to melt your chocolate ). Melt chocolate in a double boiler stirring with a rubber spatula. You can also do this by placing a metal or oven safe glass bowl on top of a pan of simmering water making sure the water does not touch the bottom of the bowl.

After the chocolate has melted, pour it onto a piece of foil or wax paper. Add your peanuts to a plate and spread them out.

Retrieve your bananas from the freezer. Holding the popsicle stick, roll the banana in the chocolate and cover all sides, top and bottom and then in the peanuts using the same method. Transfer to a clean plate and repeat until all bananas are done. Place back into the freezer until frozen ( about 30-45 minutes ).

Makes 6 delicious frozen banana popsicles

Tip: Any left over chocolate and peanuts can be mixed together to make a candy bar. Just spread remaining chocolate into about a 1/4 inch thick square and sprinkle with peanuts. Refrigerate until hardened ( about 30 minutes ). Cut into squares.

Chocolate Mint Coconut Crunch

Have you ever tried to make a candy bar? I just did and, oh my! If you like chocolate, mint, coconut and almonds this is for you. It’s extremely easy to make and so fast. I can’t keep people away from it!

Ingredients:

1lb. semi sweet chocolate chips
2oz. whole shelled pecans
3/4 cup dried sweetened coconut
1/4 teas. pure peppermint extract

Method:

Pour about 1 inch of water into a 2 to 3 quart sauce pan and bring to a simmer. Add the chocolate chips to a large oven safe bowl ( metal or glass ) and place on top of the pan to melt the chocolate. Add the peppermint extract and the coconut and stir to combine using a rubber spatula or wood spoon. Place the pecans on a baking sheet and put in a preheated 300 degree oven and bake for about 10 minutes, just enough to roast them. You can do this while the chocolate is melting. Let the pecans cool and pour them into a ziplock bag to crush into little chunks ( you can do this with the back of a pan ). Add the pecans to the chocolate mixture and stir to combine. When chocolate is completely melted and other ingredients have been incorporated pour the mixture onto a large sheet of foil or parchment paper and spread to about 1/4in. thick. Let it cool until hardened, about 3 to 4 hours ( overnight is best ). Cut into squares.
