Mexican Lasagna with Shredded Beef, Beans and Rice

This is a wonderful twist to the classic Italian style lasagna. Authentic Mexican flavors built into a lasagna! Mexican style shredded beef with refried beans and Mexican rice. Corn tortillas instead of lasagna noodles, Monterey jack cheese all smothered in a creamy red sauce and garnished with shredded lettuce, pico de gallo, guacamole and olives. Simply delicious!

    If you use a crock pot to make your shredded beef, what settings do you recommend?

      HI Kevin,

      Thanks for asking, unfortunately I don’t use a crock pot. A few people have used crock pots for some of my recipes though and said it worked very well. I would guess a medium to high setting for about 8 hours for shredded beef. Some crock pots are different than others so it’s hard to give you exact settings. If your crock pot came with a guide telling you how long to cook certain foods I would recommend whatever it says for a 2-3lb. roast and then add another hour or two.

    On one of your shredded beef recipes you use a green chili, but on a couple of others you use chili powder. Which one do you think is better? I can’t wait to try this out.

      HI Kevin,

      That’s a tough one to answer since everyone’s taste buds are different, so it really depends on individual likes and dislikes (I know that’s not much help.)
      Both are very good so I guess it just boils down to individual taste. Personally I like them both so, for me, it depends on what mood I’m in. All I can really suggest is to try both styles to see what you personally like better.
